Super Fast Parmesan Garlic Oven Fries
These super fast oven fries have a soft pillowy center with crisp edges. All the benefits of a delicious french fry without deep frying or waiting 45 minutes for them to cook.

One thing you should know about me is that I love potatoes, in every form. Brace yourself for a lot of potato recipes.
This recipe for Super Fast Parmesan Garlic Oven Fries is a new one I just tried recently. My husband, Andy, and I really wanted fries but didn’t have time to cut them all, soak in cold water, preheat the oven, and then roast them for 45 minutes. So I took some shortcuts and came up with this amazing recipe! I’ll bet you won’t even notice they’re not “real” oven fries.
Top anything with Parmesan cheese and garlic, and the rest doesn’t really matter, right? But truly. These are very good, especially for a super fast fry. The center is soft and pillowy, but you still get a beautiful crunch, all in 20 minutes from start to finish. My recipe is a small batch for 2, but feel free to double the recipe.
How to Make It
Preheat & Microwave
First start preheating your oven to 425°, and then cut up your potatoes into thick wedges. You want a nice meaty piece that won’t shrivel in the oven — about a 1/2 inch thick at the widest part.
Microwave the potato wedges for a few minutes, stirring halfway through. You can either use the “potato” button if you have it, or cook them for about 3 minutes total.
The potatoes should not cook all the way through, just become slightly more tender.
Season like crazy
The seasoning is where these fries shine.
Once the potatoes are softened a bit, cover them with all the spices, plus the garlic and Parmesan. I used grated Parmesan since that would stick better to the fries, plus fresh Parmesan for after they were baked.
For spices, I did garlic salt, black pepper, and parsley, plus “Paris Cheese Sprinkles”.
“Paris Cheese Sprinkles” is something we got from a specialty spice shop in town. It’s basically a mixture of cheese, dill, chives, onion powder, and basil, so you could add a combination of those if you want to replicate that. Or just a little sprinkle of dill and onion powder.
Cover your potatoes with everything, then add olive oil and mix to combine thoroughly.
Bake for 15 minutes
Spread evenly on a greased baking sheet, making sure that the potatoes are in a single layer. (If you are doubling this recipe, I would recommend using another baking sheet if your potatoes are crowded.)
Sprinkle a bit more Parmesan on for good measure, if desired 😉
Bake these little beauties for 15 minutes on the bottom rack of your oven. This position is crucial if you want the crispiest fries! Flip halfway through to avoid sticking.
More Parmesan, anyone?
Here’s how they turned out for me after just 15 minutes. Can you believe it?!
Super crispy and golden brown, but the inside was still soft. Hopefully you’ll have the same results when you try this, but let me know in the comments!
I did add some fresh Parmesan right before serving, which got a little melty on the pan. Yum.

Super Fast Parmesan Garlic Oven Fries
Lemon, Basil & ButterIngredients
- 2 large gold potatoes, cut into 1/2 inch wedges
- 1 garlic clove, or 1 tsp minced garlic
- 1/2 tsp garlic salt
- 1/4 tsp black pepper
- dash of dried dill
- dash of onion powder
- 1 tbsp grated Parmesan
- 1 tsp olive oil
- additional Parmesan cheese for topping
Instructions
- Preheat the oven to 425°.
- Place potato wedges in a microwave-safe bowl and microwave on high for 1 minute. Stir thoroughly, then microwave for another 1-2 minutes, or until they start to sizzle. They should not cook all the way through, just become slightly more tender.
- While potatoes are cooking, spray a large rimmed baking sheet with cooking spray.
- When finished microwaving, add all seasonings, grated Parmesan, and olive oil to the potatoes and stir to coat thoroughly.
- Transfer the potatoes to prepared baking sheet, and place on the bottom rack of the oven. Cook for 15 minutes, flipping halfway through to prevent sticking.
- Once fries are cooked to your liking and fork tender, sprinkle with more Parmesan (fresh or grated) and season to taste.
