These super fast oven fries have a soft pillowy center with crisp edges. All the benefits of a delicious french fry without deep frying or waiting 45 minutes for them to cook.
Place potato wedges in a microwave-safe bowl and microwave on high for 1 minute. Stir thoroughly, then microwave for another 1-2 minutes, or until they start to sizzle. They should not cook all the way through, just become slightly more tender.
While potatoes are cooking, spray a large rimmed baking sheet with cooking spray.
When finished microwaving, add all seasonings, grated Parmesan, and olive oil to the potatoes and stir to coat thoroughly.
Transfer the potatoes to prepared baking sheet, and place on the bottom rack of the oven. Cook for 15 minutes, flipping halfway through to prevent sticking.
Once fries are cooked to your liking and fork tender, sprinkle with more Parmesan (fresh or grated) and season to taste.
