Cilantro Lime Cauliflower

You know what vegetable they always tell you to eat, but it’s not always easy? Cauliflower. The cruciferous is packed full of vitamins and nutrients like protein, fiber, vitamin C, and folate, giving it powers to prevent disease.
We’ve probably all tried the popular versions of cauliflower in riced form, or in gnocchi, but I have to admit I sometimes get sick of the typical flavors and textures.
This recipe, brought to you by my guest blogger, Alexandra, is a great way to mix up those standard flavors with a kick. Crispy and nutty from roasting, this cauliflower is covered in a delightful thin coating of lime, garlic, and spices — made a little more decadent with the addition of egg and flour. Then it’s topped with fresh cilantro after baking.

Cilantro Lime Cauliflower
Lemon, Basil & ButterEquipment
- large bowl
- rimmed cookie sheet
Ingredients
- 1 head cauliflower
- 1 egg
- 1 tbsp minced garlic
- 1-2 tsp olive oil
- lime juice (or lemon)
- 1/4 tsp chili powder
- garlic salt and pepper, to taste
- 1 tbsp flour
- 1-2 tbsp fresh cilantro
Instructions
- Roughly chop up cauliflower into bite-sized pieces. Set aside.
- In a large bowl, whisk together egg, garlic, olive oil, lime juice, chili powder, salt, and pepper. Whisk in flour.
- Add the cauliflower to the bowl and toss to combine evenly. Transfer to rimmed cookie sheet.
- Bake at 425° for 30 minutes, flipping halfway through baking. Top with chopped fresh cilantro before serving.
