New year, new recipes! I’m excited to share this simple recipe for not-so-typical meatballs with feta, chicken, and spinach. With no breadcrumbs needed, this is naturally gluten free.

I loved using ground chicken *or* ground turkey for a healthier alternative to beef. The lower fat content and white meat made me feel better about a meat-heavy dinner. 

I was really excited to try adding some cheese to add in some more flavor to compliment the lean meat. The pop of feta and golden crust of cheese that oozed out was exactly what I was hoping for.  Just look at those crispy, perfect edges! Plus, chopping a whole cup of fresh spinach is a great way to sneak some veggies into your meal.

Serve with something creamy, like polenta or mashed potatoes. 

Or try it with pasta, like the rich egg noodles featured here. I made a really simple sauce in the same pan after I was finished cooking the meatballs: Add a little butter or olive oil, scrape up all the browned bits, and add in some chicken broth. Add a squeeze of lemon, some crushed red pepper, and dried basil.  

Try it all with Roasted Carrots or my Carrot Fries!

Spice up your usual go-to meatballs with a flavorful combination of fresh spinach, feta, and mozzarella. Use either ground chicken or feta for a lean meat alternative to beef.

Ingredients
  

  • 1 lb ground chicken or turkey
  • 1 egg
  • 1/3 cup crumbled feta
  • 1/3 cup shredded mozzarella
  • 1/2 small onion, diced
  • 1 garlic clove, diced
  • 1/4 tsp garlic salt
  • 1/4 tsp dried parsley
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • cracked black pepper

Instructions
 

  • Heat a large skillet, lightly sprayed or drizzled with olive oil. Combine all ingredients in medium bowl. Form into 1 1/2 inch balls, trying not to overwork the mix.
  • When the pan is hot, cook meatballs for 5-7 minutes a side, or until crispy and brown on the outside and cooked through. Flip 1-2 times to get all sides browned, depending on the size of your meatballs. Some of the cheese should ooze out, creating a nice crust.
  • Serve with pasta, mashed potatoes, or creamy polenta.

    I saw this recipe in time for meal planning tonight. I had all the ingredients so I gave it a try–it was absolutely delicious and very fast and easy to prepare. Since I am trying to be healthy after a holiday sugar overload I simply served the meatballs with cherry tomatoes and avocado slices.
