Spice up your usual go-to meatballs with a flavorful combination of fresh spinach, feta, and mozzarella. Use either ground chicken or feta for a lean meat alternative to beef.
Heat a large skillet, lightly sprayed or drizzled with olive oil. Combine all ingredients in medium bowl. Form into 1 1/2 inch balls, trying not to overwork the mix.
When the pan is hot, cook meatballs for 5-7 minutes a side, or until crispy and brown on the outside and cooked through. Flip 1-2 times to get all sides browned, depending on the size of your meatballs. Some of the cheese should ooze out, creating a nice crust.
Serve with pasta, mashed potatoes, or creamy polenta.
