Chicken artichoke dip

Last week, my mom and I invented this delicious dip. She was visiting because of not-so-great circumstances, but we were able to make the best of the situation with food — of course! I loved brainstorming meals together and getting to cook in the same kitchen. The last time we really got to cook together was around Christmas, so it had been at least 9 months.
One of my favorite meals we made was from one of the last nights together. We decided to do a family favorite — “appetizer dinner.” In addition to hummus and veggies, tomato flatbreads, and vegetable summer rolls, we decided to make up Chicken Artichoke Dip.

The inspiration came from our attempt to use up leftover rotisserie chicken, and I’m always a huge fan of dips in general. So we mixed up chicken, plain Greek yogurt, canned artichoke hearts, fresh spinach, and some spices. A good squeeze of lemon and diced shallot was just what it needed.
Putting it together couldn’t have been easier. And the result was a flavorful dip that was both light but felt decadent.
We served ours with cucumbers, red pepper, tortilla chips, and crackers.
If you haven’t tried these crackers, you will not regret buying them right now. I absolutely LOVE Milton’s Gluten Free Crackers! They remind me of a crisp pita chip, and they don’t taste gluten free at all. In fact, everyone loves them, so be sure to get extra.
These were a little thin for the hearty Chicken Artichoke Dip, but I made it work with some careful dipping.
This would also make an excellent wrap or sandwich, but we barely had any leftover!
Modifications:
- Trade out plain Greek yogurt for sour cream. This will add some calories and reduce the amount of protein by about 3 grams per serving.
- Add extra Greek yogurt and lemon juice if you prefer a saucier consistency.
- Add diced red bell pepper or piquillo peppers.
- Add other seasonings like dill, cayenne pepper, or black pepper.

Ingredients
- 3/4 cup plain Greek yogurt, or sour cream
- 3/4 cup rotisserie chicken, chopped
- 4 oz artichoke hearts, chopped
- 1 cup fresh spinach, finely chopped
- 1/2 tsp garlic salt
- 1/2 tsp Italian seasoning blend
- 1 tbsp shallot or onion, chopped
- generous squeeze of lemon
Instructions
- In a medium bowl, combine all ingredients and stir until thoroughly mixed. Taste and season accordingly.
- Serve with pita chips, crackers, cucumbers, or red peppers.
Notes
- Calorie count includes using plain Greek yogurt, instead of sour cream.
- Add 66 kcal per serving if you opt for sour cream. This also reduces the protein to 9.7g per serving, as opposed to 12g with Greek yogurt.
