If you’re looking for a last-minute holiday appetizer, look no further. These cranberry brie bites are fast, easy, and use only three ingredients! Plus this classy combination seems impressive and as though you’ve put a lot of time and effort into them. You can also make them ahead and pop in the oven for zero work the day of your celebration.
Lay out the crescent rolls on a floured surface (that you don’t mind cutting on) and pinch the seams to create one large piece. Use flour to roll out crescent rolls until they’re about half the thickness. Cut them into about 20 squares and place each square into greased mini muffin pans.
Place brie pieces in each cup. Top with about 1/2 teaspoon of cranberry sauce. The crescent rolls may not look very full and it might look like a small piece of brie, but the brie will boil up and expand as it cooks, so be sure not to overfill!
Bake at 375° for 13 minutes or until crescent rolls look browned. Depending on the size of your brie pieces, you may want to place a large baking sheet under the mini muffin pan in case your brie boils over (I filled my cups too full the first time I made this!).**You can make these ahead of time, store in the fridge, and then reheat for about 7 minutes (or until the brie starts to bubble) in the oven the day of. If you do make them ahead, lower the cook time to 10 minutes so they don’t overbrown when you reheat them.
