Here’s an easy one for you — Tropical Rum Punch. Anyone else feeling the summery and simple drinks lately? Well, I’m all for those. And apparently I’m also into pineapple juice lately.
Actually, did you know pineapple juice is kind of good for you? It’s anti- inflammatory and packed full of nutrients like manganese, copper, and vitamins B6 and C.
So all the better to put it in your cocktail! Truth be told, an 8 oz. serving of my Tropical Rum Punch is only 80 calories. Not bad for a very tasty drink.
How to Make It
Well the assembly of this one couldn’t be easier.
Collect your coconut rum, pineapple juice, sparkling water, and lime wedge. I used a cran-raspberry sparkling water this time, which was quite good. Other flavors that would nicely complement this drink:
- Lime
- Lemon
- Blackberry
- Raspberry
Fill your glass with ice and pour over the coconut rum, pineapple juice, and sparkling water. Give it a good stir and squeeze with your lime wedge.
For optimal enjoyment, drink this outside on a breezy summer night and serve with something like Coconut-Crusted Tilapia or Summery Salmon!

Lemon, Basil & ButterIngredients
- 1 part coconut rum
- 2 parts pineapple juice
- 1 part flavored sparkling water
- 1 lime wedge
Instructions
- Fill a rocks glass with ice.
- Add coconut rum, pineapple juice, and sparkling water. Stir to combine thoroughly.
- Squeeze lime wedge into drink and add for garnish. Serve immediately.
